Natural Wine
Natural wine is a loose, unregulated movement favouring minimal intervention: organically or biodynamically grown grapes, wild-yeast fermentation, little or no added sulphur, and minimal filtration.
How it's made
No single definition exists, but the ethos is to let the vineyard and grape speak. Natural winemakers avoid added yeasts, acid, enzymes and most sulphites, and bottle without filtration or fining.
